Here is a perfect dish for a fall casserole that can be cooked best in a Dutch oven on the top of your stove.
It is called Chicken in the Bog and I think I first heard the recipe from the Food Network. I think this is one of the best chicken recipes ever but you must use only Zatarain’s Dirty Rice for the rice in the dish. And, remember the rice is the bog so it needs to be wet. Dry rice ruins this dish.
You will need
• 1 cup of cubed ham or Polish sausage cut into half rounds
• 3 chicken thighs
• 1 red pepper, medium dice
• 1 onion, medium dice
• 1 hot pepper to be determined by how much heat you
want in this dish
• Water to poach the chicken
• Salt and pepper to taste
• Garlic to taste
• 1 box Zatarain’s Dirty Rice Mix
• Oil for sautéing vegetables and meats
Poach chicken in lots of water, salt and pepper and maybe even some chicken base. Poach for half hour at low boil.
Let chicken cool before cutting the meat off the bones and adding to mixture.
In your Dutch oven sauté the ham or Polish sausage and the vegetables in some oil. You want the vegetables tender and the meat to have browned nicely and some of the meat fat in the bottom of your Dutch oven.
Cook the rice mix in the poaching liquid, not adding hamburger if the box suggests it.
Mingle all this mess together and let sit for several hours so that the flavors can marry. Be sure to keep adding poaching liquid to the mess as wet rice like it was in a bog is essential.
This makes for some very good fall eats!
