BEAR PAW MEANDERINGS

I have written about this recipe for dressing or stuffing for many years now. I write about it for two reasons. First, it is the best dressing you will ever eat (I have people stop me on the street and tell me they have used my dressing recipe for years now and it simply is wonderful) and it is simple to make.

Try it and you will never make another dressing.

• You will need a couple sacks of seasoned bread crumbs

• A cup of fresh chopped sage

• A cup of chopped fresh rosemary

• A half cup of black olives, sliced and drained

• A half cup of green olives sliced and drained.

• The morning before you are cooking the dressing put all that together in a large mixing bowl with a goodly amount of pepper and Alpine Spice.

Let it sit over night. It should have a good sage taste and smell to it.

Next morning crumble a package of Gary and Leo’s Breakfast Sausage, cook well and add it to the dressing mixture.

Now you will need a couple of cups of fresh mushrooms sliced, a sweet onion diced, a couple of stalks of celery diced and a couple of sticks of butter along with a can of cream of mushroom soup and two cans of water.

Sauté everything together in the butter until softened. Then add the soup and cans of water and stir the entire mixture up until it is a good sauce. Add to the mixing bowl of dressing and mix very well. Cook in the bird, out of the bird or both.

I have used a hand full of cashews, a chopped up apple and some chopped dried cherries but really the basic recipe is just fine without those other things.

Bon Appétit!
